The Wusaki Unagi AUS10 utility knife 13.5cm is designed in Japan, by the Tsunehisa cutlery workshop. It's a small, extremely easy-to-handle, versatile knife. It's handy for boneless meat, fruit and vegetables... It suits professionals and amateur chefs alike who want to equip themselves with Japanese quality without giving up practicality.
A beautiful damascus blade
The blade of the Unagi knife is damascened. It's built around a core of Japanese AUS10 steel with a carbon concentration of 1.05%. This core is then wrapped in several layers of nickel-enriched steel that create a slight contrast, highlighting the different layers. The hardness is then 60 HRC: the cutting edge is rigid for better long-term retention while staying easy to sharpen. The damascus is decorative and, at the same time, balances the hardness of the core by adding suppleness to the blade.
A pleasant grip
The handle is made of oak wood, a species especially valued in cutlery for its durability. It's a thoroughly sturdy wood that's particularly resistant to moisture, shock and vibration. Light and easy to handle, the handle ensures an ideal grip. What's more, it suits ambidextrous use. It has a light black lacquer that darkens the natural shade of the oak. Finally, a binder has been injected between the handle and the blade to fill the gap and make the whole thing watertight and hygienic.
A piece born of Japanese know-how
The Wusaki Unagi AUS10 knife has a truly one-of-a-kind damascus pattern! The different layers form a circle, as though a droplet had struck the blade, spreading into small ripples across the steel. Blade and handle together make for an original, elegant piece. Finally, the logo is finely engraved on the cutting surface, for a strong sense of authenticity.
Wash your knife by hand, taking care not to run too much water over the handle, then use a soft cloth to dry it before storing it.

Use
- Cut with a straight, linear motion. Twisting motions damage the cutting edge and can break the blade.
- Use a wooden cutting board. Glass or marble dull the cutting edge over time.
Cleaning
- Wash by hand with a soft sponge and mild soap, then rinse with lukewarm water. Abrasive surfaces are not suitable for the steel.
- Oil the blade from time to time with a neutral mineral oil to protect it.
Sharpening
- Don't wait until the blade is completely dull: regular maintenance on a 1000-grit whetstone keeps an excellent cutting edge without removing too much material.
- Match the whetstone's grit to the condition of the blade — coarse grit to restore a very dull edge, fine grit to polish.
