The Wusaki Unagi AUS10 Japanese kiritsuke knife 24cm is made in Japan by the Tsunehisa cutlery workshop. This knife shape is typically Japanese, and its pointed blade resembles the traditional swords once carried. Much like a chef's knife, the kiritsuke knife is just as versatile and lets you cut a variety of foods.
An ultra-sharp blade
The blade of the Unagi knife is damascened: the core is made of Japanese AUS10 steel with a carbon concentration of 1.05%. The cutting edge is therefore stiffer and holds up better. The hardness reaches 60 HRC, making this alloy easy to sharpen with a whetstone. This core is then wrapped in several layers of nickel-enriched steel, creating a slight contrast that highlights the different layers. The damascus balances the hardness of the core, adds a certain suppleness to the blade and brings a unique aesthetic.
A handsome wooden handle
Oak forms the handle, a durable, sturdy wood species valued in cutlery. Oak resists moisture, shock and vibration. It stays light and easy to handle for comfortable use even over time. And thanks to its octagonal shape, it suits ambidextrous use! Finally, the handle is lacquered in black, which darkens the oak's natural shade for a result with more character. A binder has been injected between the handle and the blade, making the whole thing watertight and hygienic.
An authentic Japanese design
The damascus pattern on the Wusaki Unagi AUS10 knife is one of a kind. The layers follow one another in a circular shape, as though a droplet had landed on the cutting surface and spread out into small ripples. This finish makes every piece unique. Finally, the logo has been engraved in the form of fine, discreet kanji for even more authenticity.
Wash your knife by hand, taking care not to run too much water over the handle, then use a soft cloth to dry it before storing it.

Use
- Cut with a straight, linear motion. Twisting motions damage the cutting edge and can break the blade.
- Use a wooden cutting board. Glass or marble dull the cutting edge over time.
Cleaning
- Wash by hand with a soft sponge and mild soap, then rinse with lukewarm water. Abrasive surfaces are not suitable for the steel.
- Oil the blade from time to time with a neutral mineral oil to protect it.
Sharpening
- Don't wait until the blade is completely dull: regular maintenance on a 1000-grit whetstone keeps an excellent cutting edge without removing too much material.
- Match the whetstone's grit to the condition of the blade — coarse grit to restore a very dull edge, fine grit to polish.
