The Wusaki Unagi AUS10 kiritsuke knife 21cm is made in Japan, by the Tsunehisa cutlery workshop. It's a versatile knife that serves you well for meat, fish, fruit and vegetables... Its pointed blade references the Japanese swords of the samurai. It suits professionals and amateur chefs alike who want to equip themselves with Japanese quality without giving up practicality.
A remarkable blade
The blade of the Unagi knife is built around a core of Japanese AUS10 steel with a carbon concentration of 1.05%. This core is then wrapped in several layers of nickel-enriched steel, which highlight the different layers by creating a slight contrast. With a hardness of 60 HRC, this alloy has a rigid cutting edge with better long-term retention while staying easy to sharpen. The end result is a damascened blade: decorative, while also offsetting the core's hardness, since it lends the blade a touch of suppleness.
A pleasant handle
Made of oak wood, this species is especially valued in cutlery for its durability. This wood is also sturdy and particularly resistant to moisture, shock and vibration. The handle is light and very easy to handle, ensuring an ideal grip. What's more, it suits both left- and right-handed users. The handle has a black lacquer finish that darkens the natural shade of the oak. Finally, a binder has been injected between the handle and the blade to fill the gap and make the whole thing watertight and hygienic.
A piece born of Japanese craftsmanship
The Wusaki Unagi AUS10 knife has a one-of-a-kind damascus pattern! The different layers form a circle, as though a droplet had struck the blade, spreading into small ripples across the steel. Blade and handle together make for an original, elegant piece. Finally, the logo is finely engraved on the cutting surface, for a strong sense of authenticity.
Wash your knife by hand, taking care not to run too much water over the handle, then use a soft cloth to dry it before storing it.

Use
- Cut with a straight, linear motion. Twisting motions damage the cutting edge and can break the blade.
- Use a wooden cutting board. Glass or marble dull the cutting edge over time.
Cleaning
- Wash by hand with a soft sponge and mild soap, then rinse with lukewarm water. Abrasive surfaces are not suitable for the steel.
- Oil the blade from time to time with a neutral mineral oil to protect it.
Sharpening
- Don't wait until the blade is completely dull: regular maintenance on a 1000-grit whetstone keeps an excellent cutting edge without removing too much material.
- Match the whetstone's grit to the condition of the blade — coarse grit to restore a very dull edge, fine grit to polish.
