The Wusaki Pakka X50 santoku knife brings together some of the finest materials found in today's Japanese and Western cutlery. With it, you get real quality every day, and feel completely at ease with every cut, without giving up on style, of course. It's an investment that pays for itself quickly.
Intuitive to use
Its blade is made from a professional German stainless steel. This is X50CrMoV15, with a Rockwell hardness of 56/58 HRC, a steel widely used by German knife-makers. It keeps its cutting power for a long time while still being easy to maintain when needed. Ground into a V-shape on an abrasive leather strop, the cutting edge is sharpened at a 30° angle: penetration into food is clean, precise and effortless. What more could you ask for.
Premium materials working for performance
The alloy is enriched with molybdenum and vanadium, and carries a chromium content of 15%. The result is a blade that resists both corrosion and impact, which matters a great deal in the kitchen. It's a safe bet, all the more so since it's hammered in a unique pattern to boost its non-stick properties. The handle is made of Pakkawood, a composite material that stands up well to changes in temperature, bacteria and humidity.

Use
- Cut with a straight, linear motion. Twisting motions damage the cutting edge and can break the blade.
- Use a wooden cutting board. Glass or marble dull the cutting edge over time.
Cleaning
- Wash by hand with a soft sponge and mild soap, then rinse with lukewarm water. Abrasive surfaces are not suitable for the steel.
- Oil the blade from time to time with a neutral mineral oil to protect it.
Sharpening
- Don't wait until the blade is completely dull: regular maintenance on a 1000-grit whetstone keeps an excellent cutting edge without removing too much material.
- Match the whetstone's grit to the condition of the blade — coarse grit to restore a very dull edge, fine grit to polish.
