The Wusaki Nawame AUS-10 Damascus chef's knife, measuring 24 cm, proves to be the ideal tool for preparing all sorts of food. It can be used to cut meat (boneless), fish, and vegetables too. Handcrafted in Japan by the Tsunehisa cutlery workshop, this knife stands out for its Damascus blade enhanced with a unique hammered finish. Each piece features a distinct pattern, the result of traditional Japanese craftsmanship.
A blade that brings together many strengths
The blade's structure rests on an AUS-10 stainless steel core, surrounded by several layers of steel. This technical composition offers a perfect balance between edge retention and ease of care. With a carbon content of around 1.05%, AUS-10 steel reaches a hardness of 60 HRC on the Rockwell scale. The hammering on the upper part of the blade also reduces food sticking, boosting the knife's overall efficiency.
A beautiful handle in fine wood
The handle and bolster of this chef's knife are carved from a dense, sturdy ebony wood, whose dark shade blends elegantly with the Damascus blade. Use
- Cut with a straight, linear motion. Twisting motions damage the cutting edge and can break the blade.
- Use a wooden cutting board. Glass or marble dull the cutting edge over time.
Cleaning
- Wash by hand with a soft sponge and mild soap, then rinse with lukewarm water. Abrasive surfaces are not suitable for the steel.
- Oil the blade from time to time with a neutral mineral oil to protect it.
Sharpening
- Don't wait until the blade is completely dull: regular maintenance on a 1000-grit whetstone keeps an excellent cutting edge without removing too much material.
- Match the whetstone's grit to the condition of the blade — coarse grit to restore a very dull edge, fine grit to polish.
