Practical and effective
The Wusaki Migaki G3 Japanese sujihiki knife 24cm is designed by knifemaker Tsunehisa in Japan. This model is ideal for cutting beautiful thin slices of meat or fish. Its long blade lets you make cuts in a single motion. It's the Japanese version of the slicing knife!
A quality blade
The blade is called San Maï, meaning it's made of 3 layers of steel stacked on top of each other. At the center is a core of Japanese Ginsan steel, an alloy enriched with 0.95% carbon that stiffens the wire for a long-lasting cutting edge. A layer of stainless steel then wraps around this core, shielding it while lending the blade a touch of suppleness so it's less fragile in use. The difference between the steels is visible at the bottom of the blade thanks to the small wave on the cutting surface. The hardness reaches 60 HRC on the Rockwell scale, for good edge retention and easy sharpening.
A pleasant handle
The handle is made of enju wood, which has a warm, light shade. Coming from an Asian species, it's a sturdy wood that still stays light, with grain that's unique to every piece in the range. The handle is finished off with a slightly glossy effect: a flawless finish! Its octagonal shape suits every cook, right- or left-handed. Finally, a binder has been injected between the blade and the handle to fill the gap: everything is thus perfectly watertight and hygienic.
A truly elegant design
The knife has a very understated design, with a simple blade that's no less effective for it. The brand's logo on the front and discreet kanji on the back of the blade have been finely engraved for added authenticity.
Wash your knife by hand, taking care not to run too much water over the handle, then use a soft cloth to dry it before storing it.

Use
- Cut with a straight, linear motion. Twisting motions damage the cutting edge and can break the blade.
- Use a wooden cutting board. Glass or marble dull the cutting edge over time.
Cleaning
- Wash by hand with a soft sponge and mild soap, then rinse with lukewarm water. Abrasive surfaces are not suitable for the steel.
- Oil the blade from time to time with a neutral mineral oil to protect it.
Sharpening
- Don't wait until the blade is completely dull: regular maintenance on a 1000-grit whetstone keeps an excellent cutting edge without removing too much material.
- Match the whetstone's grit to the condition of the blade — coarse grit to restore a very dull edge, fine grit to polish.
