Japanese expertise
The Wusaki Migaki G3 Japanese santoku knife 16.5cm is designed in Japan by the Tsunehisa cutlery workshop. The santoku knife lets you cut, chop, chisel and mince a variety of foods. It's a knife with a typically Japanese shape that also gives you great versatility!
An effective blade
Built on a San Maï structure (3 alternating layers of steel), the blade has a core of Japanese Ginsan steel whose carbon content reaches 0.95%, stiffening the wire for a long-lasting cutting edge. This core is then wrapped in a layer of stainless steel that adds extra protection and suppleness. This difference in steel shows at the bottom of the blade, with the small wave running across the whole cutting surface. The blade is easy to sharpen while holding its edge well, thanks to its 60 HRC hardness.
A pleasant grip
The handle is made of enju wood, a lovely light-colored species native to Asia. The wood is sturdy yet stays light for a good grip on the knife. The handle has a pleasant, slightly glossy finish. The wood grain is also unique to every piece. Its octagonal shape suits every cook, right- or left-handed. To finish, filler has been added where the blade meets the handle, closing the gap so the knife stays perfectly watertight and hygienic.
A handcrafted piece
With an understated design and a fairly simple blade, this knife is no less extremely effective for it. The brand's logo on the front and discreet kanji on the back of the blade have been finely engraved for added authenticity.
Wash your knife by hand, taking care not to run too much water over the handle, then use a soft cloth to dry it before storing it.

Use
- Cut with a straight, linear motion. Twisting motions damage the cutting edge and can break the blade.
- Use a wooden cutting board. Glass or marble dull the cutting edge over time.
Cleaning
- Wash by hand with a soft sponge and mild soap, then rinse with lukewarm water. Abrasive surfaces are not suitable for the steel.
- Oil the blade from time to time with a neutral mineral oil to protect it.
Sharpening
- Don't wait until the blade is completely dull: regular maintenance on a 1000-grit whetstone keeps an excellent cutting edge without removing too much material.
- Match the whetstone's grit to the condition of the blade — coarse grit to restore a very dull edge, fine grit to polish.
