The Wusaki Migaki G3 Japanese nakiri knife 16.5cm is made in Japan by knifemaker Tsunehisa. Ideal for vegetables, its wide blade allows for clean vertical cuts. It's perfectly suited to professionals and amateur chefs alike! Equip yourself with a knife that's as effective as it is good-looking.
A quality blade
Built on a San Maï structure (3 alternating layers of steel), the blade has a core of Japanese Ginsan steel whose carbon content reaches 0.95%, stiffening the wire for a long-lasting cutting edge. This core is then wrapped in a layer of stainless steel that adds extra protection and suppleness. This difference in steel is visible at the bottom of the blade, thanks to the small wave running across the whole cutting surface. With a final hardness of 60 HRC, the blade is easy to sharpen while holding its edge well.
A handle you'll appreciate
It's made of enju wood, a sturdy yet light species native to Asia that gives a good grip on the knife. The handle has a light shade with a slight glossy effect. The wood grain is unique to every piece! It's octagonal in shape and suits right- and left-handed cooks alike. Finally, wood filler has been injected between the handle and the blade, making the whole thing perfectly watertight and hygienic.
An elegant result
With an understated design and a fairly simple blade, this knife is no less effective for it. Kanji have been finely engraved on the back of the blade, and the logo on the front, guaranteeing its authenticity.
Wash your knife by hand, taking care not to run too much water over the handle, then use a soft cloth to dry it before storing it.

Use
- Cut with a straight, linear motion. Twisting motions damage the cutting edge and can break the blade.
- Use a wooden cutting board. Glass or marble dull the cutting edge over time.
Cleaning
- Wash by hand with a soft sponge and mild soap, then rinse with lukewarm water. Abrasive surfaces are not suitable for the steel.
- Oil the blade from time to time with a neutral mineral oil to protect it.
Sharpening
- Don't wait until the blade is completely dull: regular maintenance on a 1000-grit whetstone keeps an excellent cutting edge without removing too much material.
- Match the whetstone's grit to the condition of the blade — coarse grit to restore a very dull edge, fine grit to polish.
