Japanese craftsmanship
The Wusaki Migaki G3 Japanese kiritsuke knife 24cm is designed in Japan by the Tsunehisa cutlery workshop. Like the chef's knife, the kiritsuke knife is versatile and lets you cut, chop, chisel and mince a variety of foods. Its pointed blade notably resembles a traditional Japanese sword once used by the samurai.
An ultra-sharp blade
This San Maï blade is made up of 3 layers of steel that alternate around the core. At the center, the core is made of Japanese Ginsan steel with a carbon content of 0.95%, which hardens and stiffens the wire for a long-lasting cutting edge. This core is then wrapped in a layer of stainless steel, adding extra protection and suppleness. The difference between the steels is visible at the bottom of the blade thanks to a small wave. The hardness reaches 60 HRC on the Rockwell scale, so the blade stays easy to sharpen while holding its edge well.
A good grip
The handle is made of enju wood, a lovely light-colored species native to Asia. The wood is sturdy yet stays light for a good grip on the knife. The handle has a pleasant, slightly glossy finish. The wood grain is also unique to every piece. The handle is octagonal in shape, suiting right- and left-handed cooks alike! Finally, wood filler has been injected between the handle and the blade, making the whole thing perfectly watertight and hygienic.
A handcrafted piece
With an understated design and a fairly simple blade, this knife is no less extremely effective for it. The brand's logo on the front and discreet kanji on the back of the blade have been finely engraved for added authenticity.
Wash your knife by hand, taking care not to run too much water over the handle, then use a soft cloth to dry it before storing it.

Use
- Cut with a straight, linear motion. Twisting motions damage the cutting edge and can break the blade.
- Use a wooden cutting board. Glass or marble dull the cutting edge over time.
Cleaning
- Wash by hand with a soft sponge and mild soap, then rinse with lukewarm water. Abrasive surfaces are not suitable for the steel.
- Oil the blade from time to time with a neutral mineral oil to protect it.
Sharpening
- Don't wait until the blade is completely dull: regular maintenance on a 1000-grit whetstone keeps an excellent cutting edge without removing too much material.
- Match the whetstone's grit to the condition of the blade — coarse grit to restore a very dull edge, fine grit to polish.
