Made for everyday use
The Wusaki Migaki G3 Japanese chef's knife 24cm is made by Japanese knifemaker Tsunehisa. The chef's knife is the most versatile knife of all! Regarded as the must-have among kitchen knives, it's highly practical every day for chopping, mincing, cutting and chiseling food.
Guaranteed cutting-edge performance
The blade has a San Maï structure, meaning 3 layers of steel alternate to form the blade. At its center sits the core, made of Japanese Ginsan steel (0.95% carbon), which makes the wire harder and stiffer for a long-lasting edge. The core is then covered with a layer of stainless steel that brings extra protection and suppleness. The small wave at the bottom of the blade marks this change in steel. The hardness reaches 60 HRC on the Rockwell scale, for a blade that's easy to sharpen while holding its edge well.
A handsome wooden handle
The handle is made of enju wood, a sturdy, light species native to Asia. Offering a pleasant grip, the handle has a lovely light shade with a glossy effect. Note that the wood grain is unique to every piece! Whether you're right- or left-handed, you'll feel at ease using it thanks to the handle's octagonal shape. Finally, a binder has been injected between the handle and the blade to fill the gap and make the whole thing watertight and hygienic.
An authentic design
The knife has a very understated design, with a simple blade that's no less effective for it. The brand's logo on the front and discreet kanji on the back of the blade have been finely engraved for added authenticity.
Wash your knife by hand, taking care not to run too much water over the handle, then use a soft cloth to dry it before storing it.

Use
- Cut with a straight, linear motion. Twisting motions damage the cutting edge and can break the blade.
- Use a wooden cutting board. Glass or marble dull the cutting edge over time.
Cleaning
- Wash by hand with a soft sponge and mild soap, then rinse with lukewarm water. Abrasive surfaces are not suitable for the steel.
- Oil the blade from time to time with a neutral mineral oil to protect it.
Sharpening
- Don't wait until the blade is completely dull: regular maintenance on a 1000-grit whetstone keeps an excellent cutting edge without removing too much material.
- Match the whetstone's grit to the condition of the blade — coarse grit to restore a very dull edge, fine grit to polish.
