Acacia wood, beautiful and durable
The Wusaki cutting board is made of acacia wood. This wood has several advantages: it barely moves (so it's unlikely to warp or crack over time) and it resists moisture well. Its firm fibers also make it hard, adding to its strength. What's more, acacia is an attractive wood whose warm tones fit easily into any kitchen. Note that every board has unique shading, since wood is a living material. Some will therefore be lighter or darker, with different visible knots.
One side that's handy for cutting meat
The first side has a groove running all the way around the usable surface. It lets you collect the juices from the meat you're cutting. This lets you keep them to make a sauce, and also stops them from spilling onto your worktop.
The other side lets you separate food
On its other side, this board has a large central channel that, this time, lets you set aside the food you've cut, or sort the parts to throw away from the parts to keep of the fruit and vegetables you're cutting.

Use
- Cut with a straight, linear motion. Twisting motions damage the cutting edge and can break the blade.
- Use a wooden cutting board. Glass or marble dull the cutting edge over time.
Cleaning
- Wash by hand with a soft sponge and mild soap, then rinse with lukewarm water. Abrasive surfaces are not suitable for the steel.
- Oil the blade from time to time with a neutral mineral oil to protect it.
Sharpening
- Don't wait until the blade is completely dull: regular maintenance on a 1000-grit whetstone keeps an excellent cutting edge without removing too much material.
- Match the whetstone's grit to the condition of the blade — coarse grit to restore a very dull edge, fine grit to polish.
