Made with a core of Japanese VG10 steel polished by hand until it acquires a sharp edge, the blade of this carving knife remains sharp 2 to 3 times longer than a knife made with European steel. Each knife from the Damas Olive series undergoes V-shaped manual sharpening with the use of a grinding band to ensure perfect cuts since the very first try!
The blade of this DAMAS VG10 slicing knife has a VG10 steel core with 1% carbon content, which enables the blade to attain a hardness level of 60 HRC. This Japanese steel of high quality is much harder than the one that is found in the best Western kitchen knives. We have chosen this steel thanks to its excellent characteristics and its remarkable durability.
The sharp blade has 67 layers of damask steel that create wavy lines that are unique to each single knife. There is also a hammered surface on the top part of the blade.
Matching the beauty of the blade, the handle is made of noble olive wood characterised for its veinings, its astonishing design, and a comfortable grip.

Wash by hand and dry with a soft cloth. Avoid to wet the handle as much as possible, even when washing the knife. Once in a while, you can wipe the handle with a cloth slightly soaked in olive oil to protect the wood.
