Both knives have blades with a Japanese VG10 steel core that was polished by hand until it gets a razor sharp edge. These knives' blades remain sharp 2 to 3 times longer than knives made with European steel. All the knives from this series undergo V-shaped sharpening done by hand with the use of a grinding band of leather so that you can make perfectly precise cuts.
The blades of Damas Olive knives attain a hardness level of 60 HRC and have a VG10 steel core with 1% carbon content. This Japanese steel of high quality is much harder than the one that is found in most of the premium Western knives. We've chosen this type of steel thanks to its excellent characteristics and its remarkable durability.
The blades of the Damas VG10 santoku and paring knives have 67 layers of damask steel (unique on each knife) as well as an original, hammered surface on the top part of the blade.

Wash by hand and dry with a soft cloth. Avoid to wet the handle as much as possible, even when washing the knife. Once in a while, you can wipe the handle with a cloth slightly soaked in olive oil to protect the wood.
