The 17cm blade is made of a German stainless steel that is chiefly utilized in premium-quality kitchen devices. It has a hardness level of 56/58 HRC in the Rockwell scale. This type of alloy allows the blade to remain sharp longer, plus, it is easy to hone and sharpen to obtain the initial sharpness quickly. The blade enjoys a V-shaped edge with a total angle of 30°, which makes every slice clean and precise for any type of food.
The Wusaki Hayato santoku knife is made of X50CrMoV15 steel. This German steel comprises 15% of chromium which improves its corrosion resistance. Furthermore, the blade has a hammered finish that helps to reduce the blade's stickiness. This feature is particularly useful when cutting wet items such as raw fish or vegetables. The handle is fitted with a high-quality G10 material, which is an impervious fiberglass resin free from cold, heat and wet effects. This lightweight and rounded-shape G10 handle is designed to give you a comfortable grip even for a long time use. Please note that the G10 fiberglass laminate is the result of a layer compressing process that can produce minor color variations from one piece to another. However, it has absolutely no impact on the material's quality.
