The Fujiko Santoku knife has a core made with the renowned VG10 Japanese steel. This high-hand alloy allows the blade to hold its edge 2 to 3 times longer than European steels. Thanks to its 1% carbon content, the blade's hardness is higher than most of the blades available on the market. Besides enjoying a premium steel, the knife undergoes a V-shaped manual sharpening. Thus, the blade is razor sharp right out of the box!
For the handle, Wusaki carefully selected a refined natural Olive Wood. Very sought-after by knife-lovers, this wood contains brown streaks that contrast beautifully with the lighter yellow streaks. Is is also renowned for its strength, its distinct scent that is somewhat fruity. As it is a natural material, there may be small differences in tone and veining, each piece is unique. Moreover, the straight shape of the handle enables a comfortable grip. Thanks to the smooth surface of the bolster, you can hold the knife closer to the blade, which lets you have better control over your food cuts.
The blade features 67 layers of damascus steel that create wavy lines that are unique to each single knife. The wooden handle compliments the dasmascus blade magnificently with a sharp constrast of colors. Wash by hand and dry with a soft cloth. Avoid to wet the handle as much as possible, even when washing the knife. Once in a while, you can wipe the handle with a cloth slightly soaked in olive oil to protect the wood.
