Highly effective and beautiful at the same time, this Wusaki Fujiko VG10 boning knife has numerous qualities such great cutting performance, an ergonomic design, and remarkable durability. Its stunning look makes it stand out from the rest thanks to its originality, elegance, and refined details.
Just as every Fujiko knife, the blade has a core made of Japanese VG10 steel. This renowned type of steel enables the blade to remain sharp 2 to 3 times longer than a standard European knife. Thanks to its 1% of carbon content, this steel is also harder than the one used in most Western kitchen knives. Furthermore, its V-shaped edge was manually sharpened on a leather band, and this is why you can be witness of this knife's impressive sharpness since the very first cut!
Made of olive wood, the handle has light shades and a pleasant smell that is typical of this type of wood. As it is a completely natural material, the veinings are different on every handle, and thus every knife is truly unique. In addition, the straight shape of the handle enables a comfortable grip, and thanks to the smooth surface of the bolster, you can hold the knife closer to the blade to have better control whenever you use your knife.
Around the VG10 steel core there are 67 layers of damascus steel that create unique patterns on the blade's surface.
The beautiful contrast between the damascus blade and the olive wood handle gives the knife a gorgeous look. Finally, the Japanese kanji engraved on the steel bottom of the handle adds that last touch that proves that this knife is truly special.
