Made of Japanese VG10 steel, the blades are able to remain sharp 2 to 3 times longer than knives with European steel. Each blade is sharpened by hand on a leather grinding band to give it an ultra sharp V-shaped edge that guarantees easy penetration into your foods. With 1% of carbon content, the steel reaches a hardness level of 60 HRC on the Rockwell scale. Hence, it is considerably harder than the steel of most premium Western knives. Unlike the typical black riveted handle that you are used to see in most Western kitchen knives, the handles of these knives are made of ebony wood. The veinings on the surface are unique to every single knife, so no two handles are the same. Ebony wood is a material that is robust and feels good in the hand. Last but not least, the octagonal shape of the handle adapts perfectly to both left and right handed cooks.
The core of each blade is wrapped by 67 layers of damascus steel, which gives the blade an optimal balance between rigidity and flexibility, and it alsod gives it an original look thanks to the wavy lines visible on the surface.
