The blades of thes knives are made of AUS8 Japanese steel. This alloy has a carbon content of 0.8%, which is higher than average, and that explains why the blade's edge remains sharp for longer time. The steel is also enriched with tungsten, which, when combined with carbon, enhances the blade's hardness making it reach 59 HRC on the Rockwell scale. The blades have an optimal balance between ease of sharpening and an edge that remains sharp for long time. Moreover, the high level of chromium also present in the steel improves the blade's resistance to corrosion.
