The scalloped santoku knife 17cm and the paring knife 9cm from the Wusaki Ebony AUS8 range make life easier in the kitchen of professionals and home cooks. With these knives, you enjoy professional quality at an affordable price. These knives have blades with long-lasting sharp edges that are easy to hone when needed and that are also resistant to corrosion. In addition, each blade is manually sharpened on a leather band with a total angle of 30° (15° on each side) to make precise and clean cuts.

Steel of remarkable quality

Each blade is made of AUS8 Japanese steel, which is known for its high carbon content of 0.8%, which is higher than the average. This allows the blade's edge to remain sharp for longer time despite of daily usage. The steel is also enriched with tungsten, which, when combined with carbon, enhances the blade's hardness making it reach 59 HRC on the Rockwell scale. Overall, the blades have an optimal balance between ease of sharpening and an edge that remains sharp for long. Furthermore, the high level of chromium also present in the steel helps the blades resist better to corrosion.

A handle suitable for every hand

Made of robust ebony wood, the handle of each knife feels good in the hand. The wooden surface is varnished to make it more resistant to humidity and stains. It has an oval design that adapts perfectly to both left and right handed cooks.
