The chef knife 20cm and the paring knife 9cm from the Wusaki Ebony AUS8 make the day-to-day work of professional chefs and home cooks much easier. These knives stand out for delivering a truly professional quality despite not being as costly as other knives of similar quality. Amongst the main characteristic of these knives we can mention a sharp blade that is easy to hone and that is resistant to corrosion. Moreover, each blade is manually sharpened on a leather band at a total angle of 30° (15° on each side), which ensures a precise and remarkable cutting performance.

One of the best steels out there

Made of AUS8 Japanese steel, the blades of these knives remain sharp for a long time even after daily usage. In fact, the steel has higher carbon content (around 0.8%) than the average. It is also enriched with tungsten, which, when combined with carbon, increases the hardness of the blades up to 59 HRC on the Rockwell scale. Each blade presents an optimal balance between long-lasting sharpness and ease of sharpening whenever needed. The steel also has a high level of chromium content, which is ideal to better resist corrosion.

The handles of these kitchen knives are made of ebony wood. This robust material feels good in the hand. The ebony wood is varnished to be resistant to stains and humidity. Its oval shape is comfortable for both left and righ handed cooks.

More than just knives

The blades are hammered by a press to create unique and original dimples on the surface. Those dimples give the knife an authentic look, but they also help the blade to be less adherent to humid foods. The contrast between the steel of the blades and the wood of the handles results in an elegant and refined appearance appreciated by most cooks. Finally, the Japanese character engraved on the steel bottom end of the handle is the final touch of cachet that makes each knife truly unique.
