The chef knife 20cm from the Wusaki Ebony AUS8 range is the knife that every cook must have in his or her kitchen. It stands out for its excellent quality, which isn't common to find in a knife of this price. Its sharp blade is resistant to corrosion and easy to hone. Moreover, the blade is manually sharpened on a leather band at a total angle of 30° (15° on each side) to enable a precise and remarkable cutting performance since the very first usage.

It all starts with the steel

Made of AUS8 Japanese steel, the blade has a carbon content of 0.8%, which is higher than average, and that explains why its edge remains sharp for longer time. Also enriched with tungsten, the steel reaches a hardess level of 59 HRC on the Rockwell scale. The optimal balance between ease of sharpening and an edge that remains sharp for long time is what makes this blade perfect for professional cooks. In addition, the high level of chromium present in the steel improves the blade's resistance to corrosion.
