This santoku knife from the Wusaki Ebony AUS8 series is designed to help professional chefs as well as passionate home cooks in the preparation of their recipes. With a blade made of Japanese AUS8 steel, this santoku knife has an edge that remains sharp for long time even if used daily. In fact, the steel has a high level of carbon content of 0.8%. It is also enriched with tungsten, which, when combined with carbon, allows the blade to reach a hardness level of 59 HRC in the Rockwell scale. This hardness level enables the blade to have an excellent balance between long-lasting sharpness and the ease of honing when needed. The steel also has a good amount of chromium in it, which enables it to be resistant to corrosion.
The handle of this Wusaki Ebony AUS8 knife is made of ebony wood. This type of wood is robust, and it also feels good in your hand. The surface is varnished to make it more resistant to humidity and stains. Moreover, it is quite comfortable to hold as its oval shape adapts perfectly to both right and left handed cooks.
The surface of the blade is hammered with a press, which creates dimples on it.
