The Wusaki Ebony AUS8 carving knife is designed to help professional chefs as well as passionate home cooks slice their meats with remarkable ease and precision. With this knife, you get professional quality at an affordable price. It has a durable, sharp blade that is resistant to corrosion and easy to hone when needed. Moreover, the blade is sharpened manually on a leather band at a total angle of 30° (15° on each side of the blade) to ensure almost effortless penetration into your foods.

Steel of great quality

Made of Japanese AUS8 steel, tthe blade can remain sharp for long time even if you use it daily. In fact, the steel has a high level of carbon content of 0.8%. The carbon is combined with tungsten, which results in a blade with a hardness level of 59 HRC in the Rockwell scale. This hardness level enables the blade to have long-lasting sharpness whilst still remaining easy to hone when needed. The chromium content in the steel also enhances the blade's resistance to corrosion.

Practical and beautiful handle

The handle is made of ebony wood. This type of wood is robust, and it also feels good in your hand. Its surface is varnished to make it more resistant to humidity and stains. Moreover, it is quite comfortable to hold as its oval shape adapts perfectly to both left and right handed cooks.

A knife like no other

Hammered by a press, the blade has dimples on its surface. This hammered effect gives the knife an original look, but it also makes the blade less sticky when working with humid foods. The dark tone of the ebony wood beautifully contrasts the steel of the blade, and the thin, red bands that are at each end of the handle add even more cachet to the knife's look. Last, the Japanese character engraved on the steel bottom of the handle gives the knife its final touch of originality.
