The Wusaki Ebony AUS8 bread knife has been created to help professional chefs and passionate home cooks with their daily cuts. This knife delivers a professional quality at an affordable price. It has a serrated, sharp blade that is resistant to corrosion. Its final sharpening was done manually on a leather band at a total angle of 30° (15° on each side of the blade) to ensure an excellent cutting performance.

It's all about the steel

Characterised for its 0.8% of carbon content (higher than average), the blade is made of Japanese AUS8 steel. The high level of carbon content in the steel is combined with tungsten, which results in a blade that reaches a hardness level of 59 HRC in the Rockwell scale. This hardness level enables the blade to have long-lasting sharpness whilst still remaining easy to hone when needed. Furthermore, the chromium in the steel improves the blade's resistance to corrosion.

Elegant handle with a practical design

Made of ebony wood, the handle of this bread knife is robust, and it also feels good in your hand. The wooden surface is varnished to make it more resistant to humidity and stains. Moreover, thanks to its oval design, the handle adapts perfectly to all cooks regardless of whether they are right or left handed.

Outstanding since the first cut

The blade's surface is hammered by a press, which creates dimples that give the knife an original look, but it also makes the blade less sticky when working with humid foods. The dark tone of the ebony wood beautifully contrasts the steel of the blade, and the thin, red bands that are at each end of the handle add even more cachet to the knife's look. Last but not least, the Japanese character engraved on the steel bottom of the handle gives the knife its final touch of originality.
