The utility knife 12cm from the Wusaki Ebony AUS8 series is designed to make cooks' work much easier. This knife stands out for delivering a much higher quality than other knives in this same price range. It has a sharp blade that is easy to hone and resistant to corrosion. Furthermore, the blade is manually sharpened on a leather band at a total angle of 30° (15° on each side) to enable a precise and remarkable cutting performance.

Top quality steel

Made of AUS8 Japanese steel, the blade of this knife has a carbon content of 0.8%, which is higher than average, and that explains why its edge remains sharp for longer time. The steel is also enriched with tungsten, which, when combined with carbon, increases the blade's hardness making it reach 59 HRC on the Rockwell scale. The blade has an optimal balance between ease of sharpening and an edge that remains sharp for long time. Last but not least, the high level of chromium also present in the steel improves the blade's resistance to corrosion.
