Furthermore, the blade is manually sharpened on a leather band at a total angle of 30° (15° on each side) to enable a precise and remarkable cutting performance.
Made of AUS8 Japanese steel, the blade of this knife has a carbon content of 0.8%, which is higher than average, and that explains why its edge remains sharp for longer time. The steel is also enriched with tungsten, which, when combined with carbon, increases the blade's hardness making it reach 59 HRC on the Rockwell scale. The blade has an optimal balance between ease of sharpening and an edge that remains sharp for long time. Last but not least, the high level of chromium also present in the steel improves the blade's resistance to corrosion.
Comfortable and robust, the handle of this utility knife is made of ebony wood. This noble material feels good in the hand, and its surface is varnished to be resistant to humidity and stains. In addition, the oval design of the handle adapts perfectly to all cooks regardless of whether they are right or left handed.
