The paring knife from the Wusaki Ebony AUS8 series is designed to help professional chefs as well as passionate home cooks in the preparation of their daily meals. With this knife, you get professional quality without having to destroy your budget. Among its main qualities, there is a durable, sharp blade that is easy to hone when needed, and that is resistant to corrosion. In addition, the knife is sharpened manually on a leather grinding band at a total angle of 30° (15° on each side of the blade) to ensure precise and easy cuts.

Steel of great quality

With a blade made of Japanese AUS8 steel, this paring knife has an edge that remains sharp for long time even after several cuts. In fact, the steel has higher carbon content that the average with a total of 0.8%. It is also enriched with tungsten, which, when combined with carbon, allows the blade to reach a hardness level of 59 HRC in the Rockwell scale. This is a quite good hardness level, because it represents an excellent balance between long-lasting sharpness and the ease of honing the blade again when needed. The steel also has a good amount of chromium in it, which enables it to be resistant to corrosion.

Beautiful and ergonomic handle

The handle of this Wusaki Ebony AUS8 knife is made of ebony. This type of wood is robust, and it also feels pleasant in your hand. The surface is varnished to make it more resistant to humidity and stains. Its oval shape adapts perfectly to both right and left handed cooks.

Superb cutting performance, dazzling design

The surface of the blade is hammered with a press, which creates dimples on it. The hammered surface gives the knife an original look, but it also makes the blade less sticky when cutting humid foods. 

As for the handle, the dark tone of the ebony beautifully contrasts the steel of the blade, and thin, red bands that are at each end of the handle given even more cachet to the knife's look. To top it off, the Japanese character engraved on the steel bottom of the handle gives the knife its final touch of originality.
