Made with a Japanese VG10 steel core that was polished by hand until it gets a razor sharp edge, this paring knife remains sharp 2 to 3 times longer than a knife made with European steel. Each knife from this series undergoes V-shaped sharpening done by hand with the use of a grinding band of leather so that you can make perfect cuts since the very first time!
The blade of this DAMAS VG10 paring knife is made of a steel that has a hardness level of 60 HRC and a VG10 steel core with 1% carbon content. This Japanese steel of high quality is much harder than the one that is found in most of the so-called best Western knives. The blade has 67 layers of damask steel that create wavy lines that are unique to each single knife. The top part of the blade is also characterised for its hammered surface.

Wash by hand and dry with a soft cloth. Avoid to wet the handle as much as possible, even when washing the knife. Once in a while, you can wipe the handle with a cloth slightly soaked in olive oil to protect the wood.
