This DAMAS VG10 santoku knife has a Japanese steel blade with a hardness level of 60 HRC and VG10 steel core with 1% carbon content. The blade of this santoku knife has 67 layers of damask steel (unique to each single knife), and a hammered surface on the top part of the blade. Wash by hand and dry with a soft cloth. Avoid to wet the handle as much as possible, even when washing the knife. Once in a while, you can wipe the handle with a cloth slightly soaked in olive oil to protect the wood.
