With a Japanese VG10 steel core and polished by hand until it acquires a sharp edge, the blade of this santoku knife remains sharp 2 to 3 times longer than a knife made with European steel. The V-shaped manual sharpening that is done on all our knives with the use of a grinding band ensures perfect cuts since the very first usage!
This DAMAS VG10 santoku knife has a Japanese steel blade with a hardness level of 60 HRC and VG10 steel core with 1% carbon content. This type of high quality steel is much harder than the one that is found in the best Western kitchen knives. We have chosen this steel because its excellent characteristics and its remarkable durability have no comparison!
The blade of this santoku knife has 67 layers of damask steel (unique to each single knife), and a hammered surface on the top part of the blade. The handle, being as important as the blade, is made of noble olive wood. This material is characterised for its veinings, its astonishing design, and a comfortable grip. Finally, the Japanese character engraved at the bottom of the handle provides that final touch of originality that makes your knife truly special.

Wash by hand and dry with a soft cloth. Avoid to wet the handle as much as possible, even when washing the knife. Once in a while, you can wipe the handle with a cloth slightly soaked in olive oil to protect the wood.
